Salsa Maionese by Artusi

Ingredients

2 Organic Large Eggs

Le Corti dei Farfensi EVOO

1 Organic lemon

Organic White pepper 

Salt

Preparation

Put 2 fresh raw egg yolks in a bowl and, after beating them well, beat in, a few drops at a time, 6 or 7 tablespoons of extra virgin olive oil, or more, if the mayonnaise will incorporate it. Then beat in the juice of 1 lemon. If it comes out right, it will look like a dense cream; be for-warned that you will need to beat it for at least 20 minutes to achieve this result. Finally, season the mayonnaise with a generous dash of white pepper and salt to taste. To be more certain of the results, people often use a hard-boiled yolk as well as the 2 raw ones.
